CHOUETTE DU CHAI
30 kilometres north of Montpellier, in the northern part of the Languedoc appellation, stands the Pic Saint Loup, the first foothills of the Cévennes. It is on the Hauts de Cazevieille that my territory of inspiration is located.
Here, we are in familiar territory, between cliffs and garrigues, at the Chouette du Chai, on the site of the Figarède. This is a new and ambitious adventure, and for me it is an opportunity to share with you, freely and fully, the convictions and sensibility that drive me, on my favourite terroir: the Pic Saint Loup.
17 hectares, from the land of Combe de Mortiès, allow me to preserve the best of these past years during which I have learned so much. On the Figarède, 10 hectares of vines cultivated on the high lands, will be the occasion to offer you new flavours.
