After promising beginnings at the hotel school in Montpellier, he perfected his know-how with
starred chefs such as Michel Kayser, Yannick Alléno, and Alain Ducasse.
With these prestigious experiences, he then contributed to the opening of the Jardin des Sens with the Pourcel brothers.

Today, Romain Montalva has chosen a more intimate and family-oriented setting to express his passion. Influenced by his grandmother, a true "cordon bleu," he focuses on simple and generous dishes, with particular attention to local and seasonal products.
His cuisine, which he describes as "healthy and digestible," follows the philosophy instilled by Alain Ducasse: "Less fat, less sugar, less salt."
