The Owl of the Chai
Located 30 km north of Montpellier, anchored in the magnificent landscapes of Pic Saint-Loup, the owl of the chai extends over 260 hectares of green oak forests, strawberry trees, and junipers interspersed with scrubland. Sylvie Guiraudon cultivates 18 hectares of vineyards in organic farming. The harvest is manual, and the crop is sorted very meticulously before being destemmed and pressed. Each plot is vinified separately, and the slow transformation into wine is monitored day by day.
