Les Matelles are mentioned as early as the 12th century in the Cartulaire de Maguelone, attesting to the existence of a church and a permanent community.
During the Middle Ages, the village was structured around a fortified castrum, and its church Notre-Dame-de-l'Assomption, dating from the 12th century, bears witness to its religious past. Under the Ancien Régime, the church served as a meeting place for the assemblies of the villages of the Val de Montferrand.

The House of Consuls in Les Matelles takes its name from an ancient medieval institution: the Republic of Montferrand, founded in 1276. This community included twelve parishes, including Les Matelles, and elected "consuls" to manage local affairs under the authority of the bishop of Maguelone. The building served as a gathering place for these elections.
